Today’s recipe – shredded chicken Tex-Mex

Todays recipe is my easy version of shredded chicken Tex-Mex style.  My son and I are going to ski and lift weights all week so I’m making a big batch of it.

Boneless, skinless frozen chicken breast

Start with boneless, skinless chicken breast, boil in water with a bit of salt until just cooked (white) all through.

Boil chicken until white all through

Then shred with forks –

Shredding tender boiled chicken breast
Shredded chicken breast – very low fat protien

Sautee red onions, red and green peppers and spices until onions start to get clear –

Spices used
Sautee onions, peppers, spices in one tablespoon olive oil
Add chicken, broth, stir

Now boil down the mix, boiling off the water, causing the spices and sauce to stick to the chicken.
